Based on theory friend input, and realizing that we actually want our size to 
be >= N, the recommendation so far is:
The prime number theorem says that in the range 1...N, there are N/ln N prime 
numbers, so roughly the density of prime numbers is 1/ln N. I don't know of any 
particularly clever way to do this, but if you start at N and apply a primality 
test to N, N+1, N+2,...., then it shouldn't take too long to find one.
