[ASTERIXDB-2967][IDX] Force EXCLUDE UNKNOWN for array indexes
- user model changes: no
- storage format changes: no
- interface changes: no
Force EXCLUDE UNKNOWN for array indexes, and some slight refactoring of
the tests (to reduce the array index test footprint).
