The PR is intentionally split into two commits. The first replaces the
deprecated junit `assertThat()` with AssertJ assertions throughout the file.
The second adds an `await()` to assertions around stats, which is necessary
because of a race condition in `RestoreRedundancyOperationImpl` where the stats
aren't updated until after the `CompletableFuture` for the results finishes:

resultsFuture.thenRun(() -> {
manager.removeInProgressRestoreRedundancy(resultsFuture);
manager.getStats().endRestoreRedundancy(start);
});
```
