Ah, I see now what happened... I've introduced the plugin only after starting the migration to Grails 7 (I've been working the entire time under the assumption it's been there even before). I apologize for burdening you with my confusion. 🙂 I was pretty beat after finally finding out why our app wasn't able to start, so I didn't pursue it much further - as it seemed like such a weird behaviour - but I probably should've.
