Tighten the new datamapping-support specs after rebasing onto 8.1.x

GormTransformerSpec: the @Canonical rejection test passed for the wrong
reason. Groovy expands @Canonical into the annotations it collects before
any transform in the same phase runs, so the injector never saw the
annotation; the compile failed on unimplemented GormEntity trait methods
because the injector was hooked after trait composition, and the source
line echoed in that error happened to contain the annotation text. Drive the
rejection on a hand-built class node and assert the injector's own message,
hook the entity compile at semantic analysis where the global injector
transform runs so a real GORM entity is produced, and cover shouldInject,
getOrder and all three performInjection entry points.

Keep the resolving branch of GrailsVersion.getCurrent() covered with a spec
in grails-datamapping-support, where grails-gradle-model is on the runtime
classpath through grails-core; the moved spec in grails-datastore-core only
exercises the unresolved branch.

Select the AssociationQueryExecutor createProxy overload with a mock instead
of a cast null, import ConfigurableApplicationContext instead of using the
fully qualified name, and fix the #expected placeholder and a duplicated row
in GrailsVersionSpec.
