fix: unwrap proxies returned by get() and run DirtyCheckingSpec on Hibernate 7

HibernateGormStaticApi.get returned session.find(...) directly, so when a
proxy for that id was already in the session the caller received the proxy
instead of the real entity. Hibernate 5 unwraps in both branches; do the
same here (read() already does).

The TCK DirtyCheckingSpec was skipped on Hibernate 7 on the claim that
DirtyCheckingSpecHibernate7 replaces it, but that spec covers derived and
transient properties, not relationship dirtiness. Lift the skip: the
feature 'test relationships not marked dirty when domain objects are used'
failed before the fix and passes after.
