Document the graphql-java 26 changes that reach GraphQL applications

Spring Boot 4.2 moves grails-data-graphql from graphql-java 25 to 26.1, and
26.0 has breaking changes. A new "Upgrading from Grails 9.0 to Grails 9.1"
section lists the ones a Grails application can meet: query complexity
limits enforced by default (100 levels, 100,000 fields) and how to change
them with QueryComplexityLimits.setDefaultLimits, the deprecated non-null
argument and input field validation that code-built schemas now get, and
the named-type rule for additional schema types. What's New links to it.

QueryComplexityLimitsSpec runs those limits against the schema the plugin
generates: a 101-level query fails by default, raised and disabled limits
let deeper queries through, and parse errors count as failures, since
graphql-java's parser stops past about 165 levels on its own.
