Stop pointing to the deprecated CHARACTER_ENCODING_FILTER

The 8.1.x merge-up brought examples that order a filter at
CHARACTER_ENCODING_FILTER.getOrder() + 1. On 8.1 that is the order of the
encoding filter Grails registers; on 9.0 Grails registers none, and the
constant is deprecated. The GrailsFilters Javadoc and the plugin guide now
give ASSET_PIPELINE_FILTER.getOrder() + 1 as the example, and say to use
Ordered.HIGHEST_PRECEDENCE + 1 to run right after Spring Boot's encoding
filter. The deprecated constant's own Javadoc no longer recommends itself.
