You can do that by configuring the 
[AWSEC2TemplateOptions.subnetId|http://jclouds-javadocs.elasticbeanstalk.com/org/jclouds/aws/ec2/compute/AWSEC2TemplateOptions.html#subnetId(java.lang.String)]
 option when creating the template to deploy.
