URL: https://github.com/apache/pekko-projection/pull/636

   ### Motivation
The gRPC docs say that a producer filter that excludes an event wins over
any consumer defined filter. This holds for the live event stream, but not for
replayed events: the purpose of the producer filter is to toggle whether all
events of an entity are emitted, so when a consumer replays earlier events of
an entity, either explicitly via `IncludeEntityIds` or lazily after a sequence
number gap, those events are delivered without evaluating the producer filter.
`ProducerFilterEndToEndSpec` covers this behavior.

   ### Modification
   - Add a paragraph to the "Producer defined filter" section describing the
replay exception, with a link to the "Event replay" section.
   - Add a short note to the "Event replay" section linking back to the
producer filter.

   ### Result
Docs describe how the producer filter and event replay interact.

   ### Tests
   - `sbt docs/paradox` - passed
   - Not run - docs only

   ### References
   Fixes #635
