Docs: clarify that replayed events are not evaluated against the producer filter

Motivation:
The gRPC docs say the producer filter wins over any consumer defined
filter, which holds for the live event stream but not for replayed
events. The purpose of the producer filter is to toggle whether all
events of an entity are emitted, so replay delivers the earlier events
of an entity once one of its events has passed the filter.

Modification:
Add a paragraph to the producer defined filter section and a note to the
event replay section describing this.

Result:
Docs match the behavior covered by ProducerFilterEndToEndSpec.

Tests:
- sbt docs/paradox - passed
- Not run - docs only
