Hi, I reached this post while searching for the very feature you are describing. I think it is quite important. The way Tableau handles this, for perspective, is that it asks the user to first create a "Set" of items, then create a chart based on the Set. For example, I would first need to define the logic around the top 20 customers by number of orders. This set lives as a live entity. Secondly, I create a pie chart with customer and orders, specifying that if the customer is in the set, show the customer name, otherwise show "other". This is harder to set up initially, but offers some flexibility.
