I think I've answered my main question at least.  Setting the resource's 
Resource Type property to "Installer File" seems to do it.

I guess this was really a silly question.

I still wonder about the Project's "Dir to Include" and "Install Dir" though.

Does the latter property override the default (same as Project Name) even 
though it doesn't get entered there as the default value?  It just shows as 
empty by default.
