Yes, you can have both token ring and eithernet cards in the same servers.
You could do what you dscribe, buT I would spent an extra 70-80 bucks and get at leats a small 10/100 hub or switch and connect the ethernet cards this way. It eliminates the odd-ball crossover cable being around and possibly confusing your successors and gives you place to hook up something like a laptop for troubleshootin purposes. At least that's how I'd do it.
