Well, there is might be another way to catch the culprit...who did the 
rebooting... ..it might be a painful way, but it helps, i believe...
It is so called :parts by parts troubleshooting:

First of all, what can be done is install all the hardwares only that you 
were told to.. *The below descriptions that you have given..

Here's the configuration:
Hardware:
Dell 2550
Dual PIII 1133 Mhz (BIOS v A05)
2 GB RAM
PERC 3 PCI RAID Controller
4 72 GB Fujitsu Hard Drives
Intel 8255x-based Integrated Fast Ethernet NIC
DRAC-II card
External PowerVault 128T LTO Tape Library connected via Adaptec AIC-7899
PCI SCSI card

$$ Then, INstall only WIn2k Advanced Server with the latest Service Pack...
## Leave them alone in the server room...
## Make sure that no user able to get in to the server room to do funny 
thing(Malicious users)
$$ Make sure no Terminal Services INstalled and is isolated from the 
production..]
## Lets see if there is any rebooting going on...

IF at this stage , it does... well , we are able to know that the culprit is 
not on the softwares that you are about to install, instead  the problem 
might be the Power Related issue or the hardwares ...

Might turn out to be POWER Distribution System??
ELectricity Flikering??

IF
at this point of stage, nothing happens, You can try to install the below 
softwares that you have sketched out for us(excluding Win2k server that have 
installed earlier)
and
with ONE AT A TIME
by looking out of the possibilities on rebooting.. +to catch the culprit)

Hope this helps although you got to do it one by one..installation..
No choice since can't determine at what stage that rebooting occurs or which 
are the main cause for this problem...
