Don't know if that works under the "Change Office User Settings" but you can do it by following these instructions.
Q. How do I minimize Outlook 2002 to the system tray? A. You can use the registry to minimize Outlook 2002 to the system tray by performing the following steps: 1. Start the registry editor (regedit.exe). 2. Navigate to HKEY_CURRENT_USER\Software\Microsoft\Office\10.0\Outlook\Preferences. 3. From the Edit menu, select New, DWORD value. 4. Enter a name of MinToTray. 5. Double-click the new value, and set it to 1. 6. Restart Outlook. After you perform these steps, Outlook will reside in the system tray.
