Depending on the situation you may not need to change the file back to foo.ex_ . For example, I used to expand some files from the NT4.0 i386, change the file contents per my needs and leave the expanded file in the i386 directory. The when I would use the i386 source it wouldn't overwrite the file like you would think, it would simply use the already expanded file that I modified.
