I believe you can also set an option to add any email addys you respond to
to your contacts, although I'm not 100% sure with OLXP.  I know you can do
it with OL2000 . . .

Right click on the e-mail address and you should get an option to "add to
contacts". This should work in addresses in both the TO: and FROM: sections
(even though it might not look like it).

This works with Outlook 97/98/2000 anyway, I don't have XP to test with.

According to technet it should be possible, but I have Office XP Pro, with
SP2 and it doesn't work.
