The "project in a box" basically takes you from initial planning of your deployment (disccussing what types of applications to rollout) to the end where you are in production with an activer server farm. We used it to roll out 1000 concuurrent connections. It is a good document because it very basic and easy to understand even if you are a beginner--(it's a monster doc over 200 pages). It details everything from sizing your environment to using NFUSE (Citrix's web portal). Of course also check out www.citrix.com.
