I think this is precisely an area where ConTeXt excels. What you could
do is to use \defineblock, look it up in the manual. It should be used
somewhat like this:
\defineblock[ver10] % original version
\defineblock[ver11] % new version
\hideblock[ver10]
\starttext
\chapter{My chapter}
This is an unmodified paragraph.
\beginver10
This was a wrong sentence.
\endver10
\beginver11
But corrected in version 1.1.
\endver11
\chapter{Errata version 1.1}
\useblocks[ver11]
\stoptext
