see type-exa.tex for how palatino is defined; bookman is a stand alone font (no math and such), so i didn't provide a preset for that,
\definetypeface[bookman][rm][serif][bookman][default][encoding=\defaultencoding]
\setupbodyfont[bookman]
is the kind of code you're looking for, so, you can combine all kind of fonts in a typeface collection.
