be careful with spacing. Try
\protected\def\Exp{\normal exp}
\startformula
\exp x = \Exp x.
\stopformula
If you need more math functions, you can try (here for arsinh):
\definemathcommand[arsinh][nolop]{\mfunction{arsinh}}
