Sorry, my misunderstanding, Wolfgang pointed to my mistake:
It must be \starthead{header} entry \stophead, of course.
It’s a bit misleading to name the whole entry “head”…
It's an improvement compared to the old form where the title and content
where delimited by the end of a paragraph (which can be either \par or a
blank line).
