AFAICS it is not possible to define a named tablehead like this:
\definextablehead[head]
ConTeXt does not stop, so no big problem.
But it would offer styling opportunities in a production chain with
pandoc if it is possible.
Do I miss something?

crap .. just use plain tex if that's the kind of output because that
might be more reliable and don't expect context to do a decent job
anyway when everypar etc get overloaded (ok, we have some protection
active but still: what are the expectations here); idem for hslign
