Ubuntu ships with 2007.04.17 version of ConTeXt. For most purposes this is recent enough. I would suggest that you start with that. If you run into a bug or require a new feature, then think about how to upgrade to the latest version. Ubuntu version of context is usually never less than a year old (follows texlive, I think), so using that will be easiest. To install context, go to System->Administration->Synaptic Packet Manager and search for context and install context and context-nonfree (and context-doc-nonfree if you want).
