osx-intel is for 32-bit Macs (still from time when Apple only distinguished between ppc/intel) and osx-ppc for 32-bit PowerPC. However you cannot buy 32-bit hardware any more and you cannot choose to install a 32-bit system on 64-bit hardware (unless you install ancient OS which nobody does and which might not even work due to lack of drivers). So anyone who has bought a mac after Snow Leopard has been released (late 2009?) has 64-bit Mac OS X.
