Best bet?

Grab one of the RedHat RPMS (check http://www.rpmfind.net/) - they're available for 
2.0.

Install it to get the /etc/init.d/ntop file - it will need customization with 
parameters and settings, however.  IIRC there were 2
or 3 in the package at one point - that's where I got my base from.

Then install a recent version from source. (really all you want from the RPM is the 
one file plus maybe the /etc/rc.d/rc?.d/xxxntop
links...  I'll attach my version as a starting point, but I've munged with it quite a 
bit...)
