I get an "Unrecognized option message when I try to delete the service - wondering 
what the problem is...

Available options:
/i [ntop options] - Install ntop as service
/c                - Run ntop on a console
/r                - Deinstall the service

ntop /d will delete the existing service definition
ntop /i installs it
ntop /c runs in foreground

So the best way to update it is

ntop /d
ntop /i ....
