Sure - just edit the URL and resubmit it.

Right click on one of the options on the graph screen and 'open in new
window'

That gives you the URL in your browser to edit, the end=now&start=now-1h
part

No plans to do more - if you have specific needs, man rrdgraph

I know that ntop makes extensive use of the rrdtool.  Are there plans to
allow users to query ntop with specific times and dates and look at the
data/graphs?

For example, let's say I wanted to look specifically at the graphs for a
certain host between 3PM and 6PM on Feb 2nd?  Is that kind of historical
query possible?
