Please try reading the documentation that comes with ntop!

-S is one of those things covered in detail in docs/FAQ.  Look for "Q. What
was the -S option?"

In the back traffic for these lists, there are whole threads of messages
about -S's functionality, how it didn't work and why it was removed, plus
information about it's replacement, rrd and where to find out about it.
Hint: docs/FAQ.
