cpu load, ping latency, speed (bandwidth?) can be done with MRTG.

Not sure what you mean by "amount".

Analyzing protocols can be accomplished with ethereal (I guess I should call
it wireshark now).

using perl and ngrep you could also find the top talkers on your network as
well.
