I don't understand 100% what you're wanting, but there are MANY tools that can simply capture traffic (with or without filters) and save those packets to disk - include nmons own nbox recorder.
As far as filtering the output such as only the fields you noted below are saved? That I am unsure of. nTop might be able to get close with the rrd databases - have you played with that?
