You won't have stats over a period unless you run ntop from pcap file

Ntop has an "host-centric" view. This means that for each host you have port (!= application) usage

[4] What IP's they are downloading data from?


You have something about the sessions the host has, but you won't have the whole history of these sessions

[5] Also, can data be captured over a period of time for offline analysis?

Capture pcap file and sent it to ntop.

The most important is to determine which machine, which port is using the max. network resources.
