You and your staff would still be able to walk it back to the original user through your server logs even if you wrote some rules to clean up the headers and stuff. If they want something close to true anonymity leave it as is.

We currently use surveymonkey but I have been asked if it's feasible to just tell our employees to send an e-mail and have it arrive at a mailbox anonymously.
