Just a callback to this thread.
I was able to do my 2003 with IIS enabled apps by doing the boot to DSRM and 
run standalone VMWare Converter. Then come back up Virtual and then unplugged 
the Physical from the world.

Yes, I have, but I also didn't have the VSS errors you're reporting. Sorry to
