In that case, you lose software assurance - you can't upgrade or install anything past what was current while your agreement was in force, without buying new. Download all applicable/current ISOs before your agreement expires.
That is, the numbers and kinds of installs you had per the agreement are yours in perpetuity. For instance, if you had 500 instances of Office Pro Plus 2016, you get to keep those, but without paying again you don't get Office Pro Plus version next, nor can you install the 501st instance of Office Pro Plus 2016.
