My understand is there is not a supported way to do this. What I would do is install a new AAD Connect server in Staging Mode, import any custom rules you have (you can export those to PowerShell in the Rules Editor), run it, and get it so you have zero unexpected deltas in the Sync Manager. At that point, you can shutdown the old AAD Connect, and rerun the wizard and take your new one out of Staging Mode.
You should have practically zero downtime with this approach.
