You build these boxes that you enter the data in and then link other parts of the document to that field. You then lock the document so that you then only have to enter the info into the data fields.

Think of adobe form fill... but for Word.

That’s fair enough, but I’m sure there must be some sort of Word-native function that can accommodate this and remove the requirement for the Search and Replace?

simple method, use the text <<CUSTOMER>> in the template throughout the document, and then perform a Search and Replace ALL for <<CUSTOMER>> with the actual customer name for each time the template is copied and used.
