Let me elaborate. Three times a day I rococopy all my file serves to a backup server. Full backups every Friday and incremental every day but Saturday and Friday. I have a live backup all the time plus the luxury of tape. It may seem like a waste to have a spare server around, but it sure makes life easier. I've been doing this for 5 years and have only had to restore from tape less than 15 times. Usually people delete files, not change them beyond recognition, so it's easy to get them off the backup server. Plus it saves on Veratis licenses since we only connect to one server.

You could also use robocopy from the Resource Kit and the task scheduler.

Iomega makes a product called QuickSync 3.  It runs in the background and when you save a file to a directory protected by QuickSync, a copy is automatically kept on a specified device, either fixed or removable media (i.e. Zip disks, CD-RW, Jaz disks, even floppy).  It's US$39.95 for a single license and you can get more info from:

It's not quite geared towards the server market, but it might do the trick for you.
