I have a customer that is getting close to doing this so I asked at our SBS group.
Make sure you have good backups and test them. I have talked with a few people in our group that have done this. Out of three migrations, one had minor issues that were annoying to fix. One had moderate problems where some things didn't get changed completely. And then the last was a major problem that involved calling Microsoft to get everything working. The last one would have been faster if they did everything from scratch. Sorry I don't have more info.
