What resources have you found so far?

Typically, servers are not setup by people who have zero familiarity with
servers, hence a lack of documentation available for that purpose.
Especially since you're looking to ensure security on top of it.

Deploying a server is but the very first step in the life of the server, and
you may require a bit of hand holding to get through the first 3-6 months of
operation.  Any particular reason why the franchisor is seeking to avoid
partnering with a technology consultant or small consulting firm?  (Typical
answer is cost, but you'd be surprised at how much more is spent to fix
things after a problem, than would have been spent to get them right in the
first place).

Oh, and try to avoid the animated sig around these parts.  Causes much
grief.
