I setup a WSS3 (previous version) single server farm using the included MSDE
database. I had no budget and used VMware Server on a Windows 2003 build,
8GB RAM, and 5 146G drives in a Raid5 setup. I had a couple of low use (WSUS
and DPM) VMs on the host also. The WSS VM only had 1G of RAM, single
vCPU, and the site grew to over 40GB in size. This was supporting probably
40 sharepoint users. When I got budget, we did a complete infrastructure
upgrade. The WSS database was put into a MOSS 2007 farm with separate front
end, clustered SQL running on SAS SAN drives, and index server. I can tell
you that performance only improved marginally.

I would allocate 4-6GB and then move up only if performance dictated.
