Which version of Virtual Server are you running?  In Virtual Server R2 SP1
mine shows 2 physical and 4 virtual processor's, I also have virtualized SQL
running on this box as well as 2 web and one file server.  Not a lot but
then there is only 6 GB of RAM available.
