I've had DC's on GSX/ESX for probably 4 years now. In production environment, it doesn't replace a physical box in my domain, but for redundancy it's great. We had to keep an old NT 4 domain around for years because of a legacy app and it worked great until we were finally able to shut it down. I've got an entire test domain in ESX VMWare (DC's, Exchange, ISA, SharePoint, workstations etc) and it really works great. Z, what your looking to do, is very doable, and a very good option for DR. The only reason we don't have our DC's on VMWare is because the IT manager didn't want it. I would run it all virtual with absolute confidence that it would work just fine.
