You need to leave the old box up long enough for all users to have executed 
Outlook for at least 15 minutes in order for the Outlook profiles to be updated.

Ex2010 currently on an underpowered box. Plan is:

1)      Install Ex on beefier box (member server of same domain)

2)      Move mailboxes to new box

3)      Uninstall Ex from old box and re-use serial

First: it's my understanding that Outlook profiles will be automagically 
updated to point to the mailbox's new location. Correct?
Second: Anyone see a problem re-using the serial key?

Seems a simple plan but you know how that goes....
