Transition: to leave existing servers in place and move their data and 
configuration to new servers (in this case, 2003 to 2010)
Migration: to leave existing servers behind and move their data, but not 
configuration, to a new domain/forest with Ex2k10


So, are you saying "install Ex2k10 into the existing organization and it will 
peacefully and happily co-exist with 2k3 letting one perform mailbox moves via 
the GUI in 2k10 EMC"?

Define  "transition" :)

You can have E2K3 and E2K10 servers in the same environment at the same time, 
and migrate them at will.
