Again - read the section I pointed out. Each host can have a maximum of two procs, and each proc can have a maximum of 32gb of RAM.
For the Essentials Plus package, they *really*, REALLY want you to have three physical hosts. You can put any number of VMs you feel you can support on those hosts, of course, but that's the configuration they're pushing.
