I have recent experience implementing a virtualized RightFax 10 server - it was definitely tricky to set up, because of my inexperience with RightFax, the fact that v10 was very new and the fact that it and Shoretel weren't yet certified with with each other and some of the protocol support was a bit iffy, but since then there have been no particular issues, and I'm pretty happy with it. We're also much smaller than your proposed implementation, as we had only 6 physical machines.
