Just to clarify:

In Outlook 2010, you have added both mailboxes for the user's profile.

When the user's compose mail there is a drop-down option for the "From" field 
which allows them to select the appropriate "from:" address. Despite selecting 
the appropriate From: address, the mail still gets saved in the wrong "Sent 
Items" folder?
