She is using version 6.1. Is that client used when connecting to a Web Access 
session?

What version of the Remote Desktop client is she using?   

Check out the Performance settings.  Perhaps enabling Desktop Composition 
and/or Visual Styles may work.  If not, it may be a DirectX thing, in which 
case you would need Win7 or Win8 on the client (the 2008-R2 requirement is 
already met).
